That’s right, it really is the best taco salad ever! And what’s even BETTER, is that it’s on the healthy side too! Of course we could do it a little differently to make it even more healthy, but what fun is that!? ;) Let’s go see how to make it!

You will need:
1 Lb. Ground beef (turkey works well too!)
1 can refried beans
Tostitos Multigrain chips
Pace Picante Salsa
Shredded Cheese
Lettuce
Onion
Cream cheese
Milk
Taco Seasoning
Salt, Pepper, Garlic Powder

Okay! So first we’re going to get our onions in our pan, and cook them until they’re translucent. My onions got a little overcooked – whoopsies! Then we’re going to add our meat in and get it browning. Stick your refried beans in one sauce pan, and your package of cream cheese in another. Get those going, all on medium to low heat!

Add just a few splashes of water to your beans. We want the beans to be thin and runny for this, since it’s taco salad. We don’t want big huge clumps of sticky refried beans in there! Mix that up until it’s at a thin, but not watery! Now add about 1/4 cup of milk to your cheese sauce, and mix that up until it’s nice and smooth!

Add about a teaspoon or two of taco seasoning to each pan of your beans AND cheese sauce.

Add the rest to your ground beef after it’s finished browning, and chopped up nicely! Follow the package instructions, or just add some water! I didn’t add a lot because I wanted to keep it nice and thick.

Add about a 1/2 cup of your picante salsa to your cheese sauce, and also salt, pepper, and garlic powder to taste! Give it a good stir and turn the heat downnn down down. This will burn very very easily!

Everything should be ready to go and ready to be plated up! Here we go :D Arrange your chips however you’d like them. I just kind of stuck them in there! I like the multigrain chips because, not only are they a bit healthier, but they are also GREAT in this taco salad. They don’t get soggy at all, which is nice!

Add your meat, and your beans!

Drizzle some of the gooood stuff! Cheese sauce <3 This is what makes my taco salad recipe different from others. This really IS the magic touch!

Add even MORE good stuff, shredded cheese! (Can’t have enough cheese!)

Add our chopped lettuce, diced onions, and a nice big spoonful of salsa or your favorite taco sauce!


Yummmmmmy. I want to go and make this all over again now! ;) Other things that are awesome in this taco salad are; fat free sour cream, tomatoes, jalapenos, peppers, and any other taco topping you like!

Love (& LOL) @ the photo where you show how to cook 3 things at the same time. You know who your cooking blog posts are absolutely perfect for? I am serious: young people who just left home and have to cook on their own. My kids are still young but I’m already worried about them not being able to boil water… And for a cooking novice like myself, your instructions don’t make me feel like an idiot: “What does ‘Blanch’ mean? Why do I need to know French in order to read a cookbook?” ;-)
