Sorta Simple Macaroni Salad!

So I made this on Memorial Day, and I said I would post a recipe for it, so here it is! The pictures to this one aren’t fantastic. Only because I had people pulling on my leg and I was also making other things, so I apologize for that! This recipe really is super simple though, and also super yummy!

What you’ll need:
1 Lb Macaroni pasta
5 Hardboiled eggs
2 Cups Light Miracle Whip
Celery
Onion
Mustard
Relish
Salt and Pepper

First things first! We need to boil our noodles. We’re doing this first because the macaroni noodles need to cool down completely before mixing in the mayo! If you mix everything together while it’s warm, the oil in the mayonnaise is likely to separate from the rest of the salad, which would be… GROSS! So get some water boiling, add your salt, then cook your noodles! Macaroni noodles normally take 12-15 minutes to cook.

Drain those babies!

And then (since we’re kind of in a hurry here!) place them on a wax paper covered cookie sheet. Stick that cookie sheet right in the fridge until the noddles are cool! :)

While our noodles are chillin’ out in the fridge, we’ll mix the rest of our salad! By the time we’re done with that, our noodles should be cool enough! First, Chop about two sticks of celery, and about 1/4 of one of those big pretty white onions! These of course can be changed depending on how much you like of either.

You can go ahead and put them in a large mixing bowl now. Make sure it’s one that has a lid! Foil works fine too, but lids are ever so handy!

Now we’re going to add our hardboiled eggs. I added five eggs, but you can add more or less! You can also remove the yolks from the eggs for a less fatty macaroni salad! Personally though, bring on the cholesterol! :P

Cut each of them into halves and put them in your bowl with your onion and celery.

Now! You can either use your hands to mix everything up (which is what I did!) or you can use a large fork to mash everything together. I think using your hands is the quickest, and most effective way of doing this. So mash everything together, and make sure there arent any huge yolk pieces in there!

Now that we’ve got everything all mixed up, it’s time to add our “wet” ingredients! Add your mayo, mustard, and relish to taste. :) Also at this step would be the best time to add your salt and pepper, but I forgot until the end! Either is fine!

Now mix your now cooled down macaroni noodles into everything else! And bam! Awesome macaroni salad!

Place it in your refrigerator next to half a watermelon and your yoplait yogurt… or any other place would work fine too! :P
