Perfect Spinach Ravioli

So this is one of my absolute favorite recipes! It’s sooo yummy and it’s super easy! Making really awesome (if I do say so myself!) Italian food doesn’t have to be hard!

What you will need:
• 2 Cups Frozen, chopped spinach
• 1/2 Cup Milk (I used Skim milk here to cut out some of the fat, but 2% or whole is best)
• 2 Oz. Cream cheese (DON’T use the fatfree kind, it’ll be YUCKY!)
• 1 Cup Shredded Cheese (Any kind is fine. I used colby jack AND mozzarella)
• 1 Cup Parmesan cheese
• Salt & Pepper
• Garlic (Cloves or powder is what I used, I think it’s better for this sauce!)
• Ranch dressing
• Cheese Ravioli (You can find them in the freezer section at your local grocery store, or you can make your own, but trust me, it’s a very tedious task! Save yourself time and buy them! lol)
Items that to not have an amount, just add until it tastes right to you!

Ready to make the best, yummiest, most PERFECT spinach sauce? Good! Follow me :D

First, whip out a small sauce pan and stick your frozen, chopped spinach in there. Cook spinach on medium heat until it’s nice and mushy! You should use a much larger pan if you’re making any more than 2-3 servings!

All the yummy ingredients! Ranch, Milk, our cheeses, and spices!

Add half of our milk to the now soft and mushy spinach in your pan.

Allow the spinach and milk mixture to simmer for 3-4 minutes until it’s steamy and bubbly!

Add in your ranch dressing! Not too much, you don’t want your sauce to taste like a salad! :P I normally do two turns of the pot!

Next, it’s time for our yummy cheese and spices, the BEAUTY of this recipe!

Slowly add them into your mixture, and mix until everything is blended well!

When everything is mixed evenly, add the remaining 1/4 cup of milk!

You’re going to let this simmer for about 5-7 minutes while you’re raviolis are cooking! Bring a big pot of water to a boil. Once it reaches a boil, add about a tablespoon of salt. This is the only chance you have to flavor the pasta, it’s important! Add your ravioli, and don’t forget to stir! Follow packaging instructions.

Just when your raviolis start to float (that means they’re nearly finished) add HALF of your shredded cheese to your sauce! We wait until near the end because the cheese makes the sauce very thick, gooey, and delicious!!!

Mix it up :)

Drain your noodles, then transfer them back to your cooking pot.

Transfer your PERFECT spinach sauce to your ravioli pot, and fold together. Be careful here! This cooked pasta is very very fragile and will tear if you are not careful! If it tears all the yummy cheese filling will ooze out, and we don’t want that! So “fold” in the sauce.

And SERVE! I’ve topped mine with the remaining shredded cheese and served with toasted garlic bread. :)

Yummmmmmmmmm! I made this for dinner last night and seeing it again has made me hungry! I think I’m going to go have some lunch now! :P Take care guys!!
