I know what you’re thinking. “She hasn’t blogged in forever and when she does it’s about CUCUMBERS?” I feel your pain, but hear me out. Did you know there’s about a million other uses for them, besides eating them? How do I know this, you ask? I know lotsa stuff. Like how cucumbers help mirrors not fog up. Will I ever use this? No, probably not. Sort of like algebra, only more important.

001. Cucumbers contain most of the vitamins you need every day. just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc.

002. Put down the caffeine and pick up a cucumber. Cucumbers are a good source of B Vitamins and Carbohydrates that can provide that quick pick-me-up that can last for hours. Much longer than any sugar or caffeine drink. I need to practice what I preach, since I’m the queen of Starbucks. Whoopsies.

003. Tired of your bathroom mirror fogging up after a shower? Rubbing a cucumber slice along the mirror, it will eliminate the fog and provide a soothing, spa-like fragrance. Ooooo.

004. Place a few slices in a small pie tin and your garden will be free of slugs and grubs all season. The chemicals in the cucumber react with the aluminum to give off a scent undetectable to humans but drive garden pests crazy. I’ve actually never done this because I seem to kill everything I try to grow, but I bet it works.

005. I’ve heard cucumbers really help with cellulite. (I guess it would depend on who it’s on though, haha.) The phytochemicals in the cucumber cause the collagen in your skin to tighten, firming up the outer layer and reducing the visibility of cellulite. Would probably work well on wrinkles too, same principle.

006. Eat a few cucumber slices before going to bed and wake up refreshed and headache/hangover free. Cucumbers contain enough sugar, B vitamins and electrolytes to replenish essential nutrients the body lost, keeping everything in equilibrium, avoiding both a hangover and headache!

007. Looking to fight off that afternoon or evening snacking binge? Cucumbers have been used for centuries and often used by European trappers, traders and explores for quick meals to thwart off starvation. I don’t know about you, but when I’m wanting a snack, I don’t think GEE I WANT A BLAND CUCUMBER, YUMMY. But it would probably be a better choice.

008. Rub a freshly cut cucumber over your shoes for a ghetto-polish. It’s chemicals will provide a quick and durable shine that not only looks great but also repels water.

009. For a special spa stress treatment, cut up an entire cucumber and place it in a boiling pot of water, the chemicals and nutrients from the cucumber with react with the boiling water and be released in the steam, creating a soothing, relaxing aroma that has been shown the reduce stress in new mothers and college students during final exams.

010. When you’re out of breath mints, take a slice of cucumber and press it to the roof of your mouth with your tongue for 30 seconds to eliminate bad breath, the phytochemcials will kill the bacteria in your mouth responsible for causing bad breath. Apples also do this!

011. Looking for a ‘green’ way to clean your faucets, sinks or stainless steel? Take a slice of cucumber and rub it on the surface you want to clean, not only will it remove years of tarnish and bring back the shine, but is won’t leave streaks and won’t harm you fingers or fingernails while you clean.

012. I don’t know how they do it, but the outside layer of a cucumber erases pen, crayon and marker from almost any surface. Even walls and paper. Magic :)

Pass this along to everybody you know who is looking for better and safer ways to solve life’s everyday problems.

Sometimes I forget that some of my readers are at the very beginning stages of learning how to cook. Some of them don’t know the most simple things, like whipping your own cream. Some of the most simple things though, can be some of the most delicious and… and… life altering.

Now, join me, grasshoppers. Whipping cream, let me show you.

You’ll need some heavy cream. I used almost a whole pint.

I know, you feel guilty. It’s okay, double your workout tomorrow.

Start to whip the heavy cream. Now, you can use a hand mixer like I’m stupidly using here, but a stand mixer (or hand held with attachments) with a whipping attachment works much better, and faster. But since we’re dumb, we’re taking the hard road.

It should start to get bubbly and gorgeous right away.

When you start to see it thicken, add about 1/2 cup of sugar for every pint cream used.

Keep whipping!

Done! You could have stopped at the previous stage, but I like pretty “firm” whipped cream… And that sounds like a totally disgusting combination. “Firm” and whipped cream should never go together!

Have it with berries, cakes, puddings, ice cream, yadda yadda.

Okay so this post is probably going to gross a good number of you out, and make you go “Oh my… what the!” But let’s just go ahead and face it. Everyone… everyone, i tell you, has had problems with their skin, and would like to change it. Some people have oily skin, some people have dry skin, some people have acne, rosacea, blotchy skin, itchy skin, ect. Some people take what they think is excellent care of their skin, but they’re doing it all wrong. How do I know this, you ask? I’m no dermatologist, you say? Well you’re right! BUT I have had minor problems with my skin for years and during those years, i have tested out just about EVERY theory there is. So, sit down and get comfy.

Raise your hand if you have never gotten a pimple. …. …. … Yeah, I didn’t think so! Raise your hand if you have (as disgusting as it is) never squeezed a pimple in hopes of getting rid of it? ………………. YEAH! Let’s face facts. Everyone gets them, everyone attempts to get rid of them.

1.) First things first. Pop them, please. For the love of everything sparkly, get rid of them. I don’t care if you’ve heard that you aren’t supposed to squeeze them, it’s a big fat lie. I don’t know how many times I’ve heard people say something along the lines of “Well I have this big disgusting attention-drawing boil on my face because they say you aren’t supposed to squeeze them. It gets the germs all over and creates more!” Okay well maybe not word for word, but something like that. It’s perfectly fine to squeeze as long as you clean the area before and after. This will stop germs from partying all over your skin and loving it so much they just wont leave.

2.) Don’t try to scrub yourself raw. Use something with exfoliating beads like neutrogena grapefruit acne wash and be nice to your skin. The beads will take care of any dead skin cells and leave the healthy ones where they belong. Scrubbing is too rough for the skin on your face.

3.) Moisturizing. Something that totally gets over-looked nowadays. Don’t just use any lotion. Don’t use the cheap scented stuff from bath and body works. Like your makeup and face wash, you need to find a moisturizer that matches your skin type. They have moisturizers for every skin type you could imagine. Once you figure out what yours is, just trial and error. Buy one and see how you like it, and if it’s not for you… give it to your sister, or mother, or grand mother, or mail lady. Some companies even offer money back guarantees for their products. When you find the one that makes your skin feel great, not too oily and not too dry, stick with it! You’ll know when you’ve found your match.

4.) Last but not least, comes a mistake that nearly every woman has made in her cosmetics-buying lifetime. Oil based makeup. They are the most vile products on the market today, in my opinion. They make your skin feel like you’ve got a built up layer of wax hangin’ out on it. Not only that, but the oil actually causes more breakouts for people that already have oily skin. Personally, I have medium to oily skin, so I have trouble finding products that suit my skin. But either way, opt for water based products only. You’ll thank me.

Here are the cleansing products I use.

Neutrogena grapefruit acne wash, Aveeno daily cleansing pads, and Aveeno daily moisturizer.

There’s something about roasting veggies that makes them so… delish! Something happens to them when they’re under foil, something that just cannot be explained!

In this recipe I toss fresh green beans, onions and new potatoes in olive oil, rosemary, and minced garlic. This will make your house smell like pure love, and could quite possibly make your children, pets, significant other, friends, family, love you just a little bit more.

You’ll need: One half onion, (cut however you prefer) four large new/red potatoes, fresh green beans, minced garlic, rosemary, olive oil, and salt and pepper to taste.

Start out with your onion. I have one half of a yellow onion, that’s pretty thinly sliced. Feel free to slice an entire onion, or dice yours. The world is your oyster.

I just broke apart all the pieces and stuck them in a bowl. We’ll be combining everything in a bowl first. When roasting, most (normal) people just stick the veggies on a pan, coat with olive oil and salt/pepper. I’m not sure why, but I like doing it this way. It coats everything evenly, and you don’t waste half of the olive oil you pour out. Which is expensive, mind you.

Now let’s move on to our green beans! Glorious, gorgeous… GREEN green beans! I think these are my favorite vegetable.

See all those pesky little ends? You’ll need to remove those. You can do it with your fingers, but I prefer to line them up three or four at a time and take the ends off with a sharp knife. You can also cut the long ones if you’d like.

This is tedious, but please don’t skip it. Having your guests have THAT in their mouths will NOT be pleasant, I promise!

Add your green beans to your bowl with the onions, just act like I didn’t forget to take a picture of that.

I LOVE new potatoes. Love them. Well I could probably live on potatoes alone anyway, but they are a nice change from your regular potato. Make sure yours are nice and clean. Mine are pretty beat up (red potatoes seem to have much more sensitive skin that gets banged up a little easier than regular potatoes.) I’m guessing it’s because I elected for the preselected bag of them rather than picking my own individually. Hey, I was in a hurry. And I was hungry. Don’t judge me.

Start by cutting them in half.

Then quarter the halves. You can also halve the quarters, or quarter the quarters, and then quarter the quartered quarters… if you really wanted to. I’ll still love you.

Go ahead and throw them in the bowl, too. Rinse, repeat.

As you can see, my bowl is a little full.

I guess I didn’t think I had this much veggies. Hey, what did I tell you about judging me?

So I went ahead and transferred them to a much larger plastic mixing bowl. Now we’ll add our spices.

First we’ll start out with one sprig of, delicious and amazingly fragrant, rosemary.

You’ll need to remove all of the leaves.

And give it a pretty fine chop. Personally, I don’t like huge pieces of rosemary in my mouth. You could certainly skip the chopping though, if you don’t mind it.

How pretty!

Now. Pay attention. This little jar, is a life savor. I love fresh garlic, I really do. BUT. I absolutely hate chopping, cutting, peeling, touching, cloves of garlic. It makes my hands smell like garlic for days and I find it extremely irritating trying to cut it. So this is what I buy instead! It’s JUST as potent and yummy as fresh garlic.

We’ll add a good tablespoon or two of that in there. More or less depending on if you can stand the garlic. I happen to LOVE it though.

Yummmmmy.

Add in your olive oil. Maybe three or four turns of the bowl. (Like my measurements?)

Next comes the salt and pepper. Don’t skimp! This neeeeds salt.

Give them a good toss to get things evenly coated.

Transfer them to a rimmed baking sheet. Or “Jelly roll pan” if you want to get technical. I cover mine in foil every chance I get. Only because roasting veggies can leave a nasty mess on your pans… me being lazy has nothing, nothing at all, to do with it.

Lovin’ the colors!

Beauty-full!

Cover these babies with foil and bake them in a 400 degree oven for about 40 minutes. Uncover and bake (or broil which is what I did) for an addition 5 to 10 minutes.

With everything that’s been going on around this funny farm, mine overcooked a tad. Nevertheless, they were full of yum.

We had them with burgers. Mozzarella stuffed burgers with sauteed onions. Again, full of yum.

By the way, can you tell that we love onions up in here?

Hello all! I’ve been so, very, stupidly busy lately. My apologies for no posts! My baby girl Penny, as some of you know, has been pregnant for the last 65 days or so. On Friday night she went into labor and had some serious complications. I wont go into detail, but unfortunately we lost two out of the three puppies. She had to have a cesarean performed, so she’s been spending the past few days in bed. Eating a lot, resting, and taking care of her baby girl.

Now I’m off to post the pictures for Roasted Rosemary New Potatoes and Green Beans. It’s going to be a separate post. For, you know, organization’s sake!

I don’t know about you, but chicken tenders and macaroni and cheese always remind me of lunches as a kid. Possibly with some green beans, that miraculously ended up stuffed under the tie-on chair cushions. Or spaced out all over the plate to give the illusion that some were eaten. Or in the dog’s belly. In any case, the chicken tenders and macaroni were never stuffed anywhere besides our precious little tummies!

What you will need: Chicken, I’m using boneless skinless chicken breast tenderloins. Baking Miracle’s baking coating, italian style bread crumbs, half a teaspoon of black pepper, half a teaspoon of sugar, half a teaspoon (or eyeball it) of Mrs. Dash’s Extra hot (which is thebeststufftoeverbeinvented i♥you Mrs. Dash!) salt to taste, and one egg.

We’ll start with getting our breading together. First, add your Bakin’ Miracles. I kind of just eyeballed it here. You don’t have to add this, either. I just like the subtle smokey flavor it gives the chicken, and also the nice orange color.

Add your bread crumbs. Again, I just eyeballed it!

This. Stuff. I LOVE Mrs. Dash. I have used every kind that they make, and I have to say, there isn’t a better variety of spices out there. Go buy them, now!

Pepper, sugar, and sea salt. You can also use regular table salt, or kosher salt. And all that pepper didn’t go in here, only about half. The other half went into the mac and cheese.

Isn’t that beautiful? Give your spice and bread crumb mixture a good mix, and let’s get it on the chicken!

Give your egg a good stir.

Grab a piece of your chicken, and…

Let it go for a swim.

Making sure all parts of the breast are coated. I use tongs, because raw meat grosses me out, eggs too. Yes, I’m a girl about germs.

Nice and coated.

Drop it right in the center of your bread crumb mixture, and give the bowl a good shake to give it a good coat.

Turn it over and do the same.

Transfer the coated chicken to a baking sheet with a rack on it. (Hahaha… I’m funny.) I used a baking rack (or you can stick a cooling rack on a baking sheet, same dif) so the bottoms of the chicken don’t get too mushy. If you don’t have one, you can just flip your chicken over half way through baking. But I’m lazy, so I’ll take any shortcut ya got.

These should bake for about 20-25 minutes on 350. At the end of baking, I also turned on the broiler, to give it some extra color.

Come to Mama!
